Description
The research activity will focus on the use of microbiological and biotechnological techniques for the production of fermented functional foods. Powders and extracts will be obtained from plants and by-products of the food industry, with the aim of enhancing bioactive compounds in a sustainability-oriented approach. Fermentation processes will be monitored through culture-dependent and -independent microbiological analyses, as well as physico-chemical and sensory evaluations, to assess the feasibility and consumer acceptance of the developed products. Particular attention will be given to the antimicrobial activity of the bioactive ingredients and to the stability of the final products, with the goal of developing innovative foods with high added value
