Description
The research activity will focus on the development and optimization of advanced enological practices and on the application of biotechnological tools aimed at mitigating the effects of climate change on the composition of grape musts and wines. Innovative pre‑fermentative and fermentative management approaches will be tested, including the use of selected yeast strains, bioregulators, and next‑generation enological adjuvants. Process performance will be monitored through high‑resolution chemical‑physical analyses and sensory analysis, in order to assess the impact on the colloidal, aromatic, and structural properties of wines. The expected outcomes include increased technological resilience, enhanced process sustainability, and improved qualitative performance of the final products.
