Description
The FERM-GUT project investigates fermented food extracts as sources of bioactive moleculesinvolved in microbiota-gut-brain axis transmission. The activity includes the microbiological and molecular characterization of fermented foods, the assessment of the release and transformation of bioactive compounds using in vitro gastrointestinal models, including static and dynamic approaches, and the analysis of interactions with the gut microbiota and intestinal epithelial barrier. The selected person will contribute to the handling of samples derived from fermented foods, simulated digestion, gut ecosystem simulation and intestinal barrier models, applying molecular biology techniques, including RT-PCR and qPCR, and analysing experimental data using R and statistical/bioinformatic tools...
