Description
The research activity deals with the development of a biotechnological process for the production of bioactive hydrolysates from poultry and fish industry wastes/byproducts. In specific, the research activity will deal first with the set up and optimization of a biotechnological process based on the exploitation of extremophilic bacteria for the production of extremozymes, hydrolysates enriched in bioactive compounds exhibiting antimicrobial and/or antioxidant activities. Then, the activities will deal with the development and optimization of downstream process conditions for the recovery of the produced bioactive compounds.
