The research activity is part of the project “Development of innovative and advanced analytical methodologies to support and verify the authenticity of Aceto Balsamico di Modena PGI”. In particular, this research activity will focus on the development of the following analytical phases: i) statistically significant sampling of the investigated samples (Aceto Balsamico di Modena PGI samples of different ages, cooked musts, concentrated musts and wine vinegar); ii) efficient and, where possible,environmentally friendly treatment of the investigated samples, allowing accurate and precise analytical measurements to be carried out (omissis)
