Description

The research program focuses on the analytical evaluation of foods with the aim of identifying and quantifying the bioactive compounds they contain. Particular attention is devoted to investigating the potential preventive effects of these components against external stressors, such as environmental, chemical, or physical factors, that may contribute to the activation of cellular processes associated with the development of various diseases, including those with potential carcinogenic effects. Through the use of advanced analytical techniques and appropriate experimental models, the research aims to clarify how specific food components may exert protective effects or modulate the harmful impact of such stressors. The ultimate goal is to contribute to the development of preventive strategies and innovative nutritional approaches aimed at reducing the risk associated with exposure to factors with potential carcinogenic activity.
