Description
The project consists of a part directly conducted in "the field" (in this case a dairy farm) and a part in laboratory. Several batches of cow's whey will be appropriately identified and selected for microparticulation treatment that will be done in the same dairy farm. The microparticulated whey and the native whey will be analyzed to measure certain chemical, physical, and functional properties of the protein fraction. Both products will undergo fermentation treatments under controlled conditions and with different microbial cultures. The fermented product will be submitted to hygienic controls with the purpose to use it as an ingredient in the production of foods and beverages, which at this stage will be identified as prototypes. These prototypes will be tested to evaluate shelf life, nutritional properties, and digestibility.
