Description

Development of analytical methodologies to authenticate the natural and/orbotanical and/or geographical origin of flavorings, and development of new food ingredients using biotechnological methods.The Research Fellow will perfom:i) Optimization of extraction protocols for the preparation of samples from food matrices/ingredients.ii) Acquisition, processing, and interpretation of high-resolution NMR spectra in solution from samples of food matrices/ingredients.iii) Application of chemometric methods to the acquired NMR data for metabolic profile analysis (fingerprinting and profiling), with particular focus on the determination of origin, quality, and authenticity.iv) Creation of an NMR database of authentic raw materials, to be integrated with data obtained from other spectroscopic techniques.
