Description

The project aims to verify, under realistic conditions, whether the developed bioplastics can effectively replace conventional packaging materials for foods from the Mediterranean area, such as fresh tomatoes and fresh goat or sheep cheeses. The core of the research is a comparative assessment of packaging performance throughout storage. For the selected foods, standard packaging will be compared with bioplastics. In parallel, sensory evaluation and shelf-life tests will be carried out to assess the qualitative properties of the foods. A further objective is to describe the microbiological dynamics occurring during the storage of the different foods investigated in the study.
