the research activities will concern the agronomic andphysico-chemical characterization of minor table olive cultivars, withparticular attention to the support of agronomic strategies aimed atimproving their aptitude for processing. To this end, the main qualityparameters of the drupes will be analyzed, including size, degree ofripeness, pulp/stone ratio, oil content and reducing sugars, together with theagronomic monitoring of the plants and the collection of the related physicalchemical data. The processing of the results will allow to define the varietalprofile and to evaluate its potential technological aptitude. The study andenhancement of minor cultivars for the production of table olives in Italy willbe carried out with a view to compliance with the DNSH principle and toprotect and enhance plant biodiversity, therefore the environmental criteriaas per EU Reg. 852/2020
