Description
The research activity will include the following activities: (i) microbiological, chemical, and nutritional (e.g., antinutrients) characterization of the selected by-products to ensure their suitability as substrates for microbial growth and process reproducibility; (ii) mixed starter selection based on fermentation kinetics, key enzymatic activities and production of nutritionally relevant functional compounds; (iii) definition of the key parameters of solid and liquid state fermentation to enhance hydrolysis of complex carbohydrates and proteins and functional compounds release; and (iv) use of bioreactors.Additional research activities in the context of other research projects on similar topics may be defined in due course with the mutual agreement between research assignment holder and tutor ...
