Description
The research focuses on extracting and characterising bioactive, antioxidant compounds to improve the nutraceutical quality and stability of low-salt table olives stored at various temperatures. Advanced extraction and analytical techniques will be optimised to monitor the efficacy of polyphenols and bioactive molecules during storage. Analyses will be conducted at the Marine Biochemistry and Ecotoxicology Laboratories of the DiSTeM Department (University of Palermo, Trapani campus). The findings will provide innovative solutions to extend the product's shelf life, nutritional quality, and functional value, enhancing environmental sustainability by reducing spoilage and waste.
