Selection and validation of microbial starter cultures. Metagenomic analysis of the microbiota of durum wheat grain and semolina; isolation and characterization of lactic acid bacteria (LAB); in-culture screening for asparagine reduction; strain propagation and inoculum preparation; monitoring of durum wheat conditioning and bread dough leavening processes, with verification of the activity of inoculated strains during pasta- and bread-making processes.
