Description

The activity of the grant holder will be focused on developing and calibrating experimental protocols using selected model products, defining sampling frequency, and verifying the ability of an innovative cooling system in maintaining target thermo-hygrometric conditions while limiting dehydration and quality loss. The grant holder will support the partner of the project also in the measurements of the temperature/RH% distribution into the chamber’s system, as well as in the optimization of the ratio between chamber volume and product volume. Thecandidate will development and calibration of experimental protocols for the evaluation of cooling systems and horticultural product quality according to main analytical methods such as the measure of soluble solid content (SSC), color, titratable acidity (TA), total polyphenol content (TPC), firmness and must be able to apply and develop sensory acceptability tests.
