Description
The project will focus on support for the development, formulation and characterisation of food systems enriched with antioxidant compounds derived from agri-food by-products. Studies on lipid oxidation kinetics and antioxidant reactivity will be conducted using spectrophotometric, electrochemical and calorimetric methods. The activities will include extraction and fractionation, analysis of oxidative stability in model matrices (oils and emulsions), as well as evaluation of the effect of processing and storage conditions on shelf life. The research will involve the use of advanced instrumentation (microcalorimetry, DSC, UV-Vis, FIA-ECD), alongside kinetic modelling and statistical analysis of the data... (see call)
