Chemical and biochemical characterization of low allergen tomatoes and local carrot varieties

The research activities fall within the AGRIMED R&S project and, in particular, within activities 10.3 – Low‑Allergen Tomatoes Obtained Through Molecular Editing (PACGEN) and 10.9 – Development of a Diversified Seed System for the Production and Commercialization of Seeds of Carrot Genotypes (ProSeCa) of WP10 – New Plant Varieties Resilient and Suitable for Southern Production Contexts.-The object of the research assignment will be the accurate phenotyping of fruits through metabolomic analysis of the edited tomato plants. In parallel, a qualitative characterization is planned to define the taste profile and organoleptic appreciation of local carrots, through a qualitative assessment of their health‑promoting properties using an omics approach. This includes both ionomic characterization via X‑ray fluorescence spectroscopy (XRF) and metabolomic profiling through high‑resolution mass spectrometry.
